Bun Pan Racks

The new open air cooling policy is designed to cool bread quickly, resulting in improved resiliency, consistency, better taste & bread less prone to wrinkling. Bread is to be cooled during the initial 30 minutes after baking, then it should rest on a bun pan rack that is open & without walls. Racks have 4" of spacing for this purpose.
